Interesting question. I would say none because all athletes are practicing since their youngest ages and are in their 20’s, you won’t catch their level with a 30’s body starting from scratch.
Only ones i can see are Archery, Horse Riding, Golf and maybe Boxing.
The question was what’s the easiest sport to train for in your 30’s and hope to win. Shooting is an obvious answer at it requires very little pure athleticism. Obviously it is still incredibly unlikely but you would definitely have a better shot than an actual physical activity. And a ton of the shooters in this Olympics were in their mid 20s, they don’t all have 35-40 years experience lmao

The shooter guy was 51, if you start in your 30s that’s 20 years of training
20 years of training against people with 35-40 because they didn’t start in their 30’s , still the same problem.
